It all started with a pin… Tomato, avocado, & couscous salad

It all started with a pin. My bestie pinned a delish looking salad on Pinterest staring my fave avocado! It looked so yummy with the tomatoes and dijon dressing that I had to try it! (Spoiler alert, I didn’t make this recipe all, but we’ll get to that).

I digress, making this new recipe meant trying quinoa, which I’ve been meaning to try anyway. So at the store I bought what I thought were the I rest of the ingredients I didn’t have, including quinoa.

So I soaked my quinoa in chicken broth and then cooked it… And then I smelt it… What is that? It smells like… Warm dirt??? My entire house smelled like warm dirt. Seriously warm dirt. I tasted what was in the pot… Yep tasted like warm dirt. So here I am with my heart set on this yummy tomato and avocado salad and all I’m thinking is “What the frack? Is this what it’s supposed to taste like?” So I reread the Instructions and pull up the recipe. Looks like I made the quinoa right, but didn’t get like half the ingredients I needed?!
So now I have a pot full of warm dirt and not all the other ingredients for this salad, but I have gorgeous ripe avocados and cherry tomatoes staring at me waiting to be made into something super yummy.

Off to my pantry I go and I see it… My beloved couscous! BOOM! Whipped up some couscous, chopped up my avocado, halved my tomatoes, and added oil and red wine vinegar. Ahhhhhhhhhhh. Super crazy delicious!
So yummy I made it again the next day but with rice pilaf.

Avocado, Tomato, & Couscous Salad
-1 box of couscous (follow instructions on box. I use 1/2 the flavor packet.)
-1 avocado diced
-1 cup of cherry tomatoes halved
-About 2 tablespoons of red wine vinegar
-About 2 tablespoons of oil
Add dressing to tomatoes and avocados and mix well. then mix into couscous (or rice pilaf… Or Quinoa if that’s your thing). 🙂

The original recipe I was going to make is on my Pinterest board “I’m not vegan, but…” It does look super yummy and I might try this quinoa thing again someday. 🙂
