Oh crock pot how I love thee… Let me count the recipes…
Whether you make this in the crock pot or a big pot on the stove my Two Bean Chicken Corn Chili is a hearty, easy to make one pot meal. That’s one pot to cook it in, which means one pot to clean!!!
This recipe is exactly what it says it is; two types of beans, corn, chicken, and a few other ingredients…so let’s get to it!
-About 1.5 pounds of chicken breast cubed
-1 can black beans
-1 can red kidney beans
-1 can corn
-1 jar salsa
-1/2 pack taco seasoning
-8 oz can on tomato sauce
-4 oz sour cream
-Turn pot on high and let get hot
-Add 1/2 jar of salsa to pot
-Add chicken to sear
-Add rest of ingredients (sans the corn and sour cream)
-Cook on high for 2 hours stirring every so often.
-Stir in corn and sour cream, and turn to low heat for another hour.
Add some shredded cheese on top and serve with chips, stuff tacos, or make fajitas!
I finally got some pics of this yummy meal! My secret…I did this before my hubby got home and ate all my chili!
This recipe is also great left over. It’s perfect for tailgating, a big family meal, or a make a head and freeze meal.
I happened to have a taco kit in the pantry, so I made some two bean chicken corn chili fajitas! Super yum!
