Oatmeal Cookie Ut-Oh!
I was jonsing for a cookie fix, so I decided to make some oatmeal cookies. When I started to get my ingredients together I quickly realized I did not have enough to make my usual recipe!
Determined to make oatmeal cookies I decided to look up a new recipe online. Oatmeal cookie recipes vary greatly: from 3 cups of brown sugar and no white sugar, to 1 cup of each depending on the recipe!
Having limited brown sugar and not as many quick oats as I thought I found a recipe that worked with the ingredients I had. The result? What I call Oatmeal Ut-Ohs! They are slightly fluffy, but still a little chewy. For some crunch I added pecans. I will definitely use this recipe again!
Recipe as follows:
1tsp of vanilla
1 cup of butter (2 sticks)
1 cup brown sugar
1 cup sugar
2 1/2 cups flour
2 tsp of baking soda
2 cups quickoats
dash of cinnamon and/or nutmeg if desired
1 cup on nuts of your choice if desired
Preheat oven to 350 degrees. (Remember to lower by 25 degrees for dark pans!)
Cream butter with sugar and brown sugar.
Add eggs and Vanilla.
In seprate bowl combine all dry ingredients then mix in slowly to wet ingredients.
Add nuts in last if desired.
Bake 10-15 minutes. Let cool and enjoy!
